Recipe: Cheese Nachos with Pineapple, Black Beans and Jalapeno Peppers

SERVES:
2 or more

INGREDIENTS:

  • Corn tortilla chips

  • Canned black beans

  • Canned diced pineapple

  • Jarred pickled jalapeno slices

  • Chopped green onion

  • Tomato salsa

  • Grated Mexican blend cheese

There are no set amounts…use your judgment.


PROCEDURE:

Put a layer of corn tortilla chips on a large plate...that will eventually fit into your microwave....and top those with a sprinkling of drained black beans, diced pineapple, sliced pickled jalapeno peppers, chopped green onions, a little well drained jarred tomato salsa and a healthy amount of grated cheese....and continue to build layers like that....finishing with grated cheese over the top of everything.

The nachos will probably only take 2-3 minutes tops in the microwave.


HINTS:

Make sure that the diced pineapples and tomato salsa are really well drained for this and...also....the canned black beans need to be drained and well rinsed.
