Recipe: Root Vegetable Slaw

SERVES:
Makes 4-5 cups
INGREDIENTS:
- 1 large turnip, peeled
- 1 large parsnip, peeled
- 1 large carrot, peeled
- 1 large apple
- Approx. 3-4 Tbs mayonnaise
- Approx. 2 tsp Dijon mustard
- Approx. 2 Tbs apple cider vinegar
- 3-4 Tbs fresh chopped parsley
- Salt and pepper to taste
PROCEDURE:
Use a box grater to grate the peeled turnip........peeled parsnip........and peeled carrot into a large mixing bowl.
And as far as the apple goes it's up to you whether or not you want to peel it...grate that into the bowl as well.
Then add 3-4 Tbs mayonnaise to that and 2 tsp Dijon mustard....add a little salt and pepper....2 Tbs apple cider vinegar and the fresh chopped parsley and mix to combine.
HINTS:
Use a food processor with the grater attachment if you like.
Make this a day ahead of time and keep it in a tightly sealed container in the fridge.
