Recipe: Applesauce Oatmeal Cookies with Golden Raisins and Walnuts

SERVES:
24 large cookies
INGREDIENTS:
- 1 stick room temperature unsalted butter
- 1 1/2 cups light brown sugar
- 1/2 cup applesauce (unsweetened is best for this)
- 2 large eggs
- 1 tsp vanilla
- 1 3/4 cups all-purpose flour
- 1/4 cup whole wheat flour (see hints below)
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 3 cups old fashioned oats
- 1/2 cup golden raisins
- 1/2 cup chopped walnuts
PROCEDURE:
Preheat the oven to 350 degrees and use a mixer to cream 1 stick of room temperature, unsalted butter with 1 1/2 cups light brown sugar.
Then add 1/2 cup applesauce, 2 large eggs and 1 tsp vanilla and turn the machine off.
Next, use a medium small mixing bowl to combine 1 3/4 cups all-purpose flour with 1/4 cup whole wheat flour, 1 tsp baking soda, 1 tsp ground cinnamon and 1/2 tsp salt and mix it up.
Turn the machine back on to a low speed and slowly and carefully add the flour mixture and, when that is all incorporated, add 3 cups old fashioned oats, 1/2 cup golden raisins and 1/2 cup chopped walnuts and turn the machine off just as everything is mixed together.
The dough will be pretty sticky at this point and you'll probably need to use two spoons to shape it into 24 equal sized cookies on two non stick baking trays and place those into the preheated oven.
They'll take just about 20 minutes to bake and you'll want to switch the trays from top to bottom about half way through and spin them half way around once as well.
HINTS:
Use 2 cups all-purpose flour, instead of 1 3/4 cups, and leave out the 1/4 cup whole wheat flour if you like.
Put parchment paper on regular baking trays if you don't have non stick trays.
