Recipe: Apple Oatmeal Muffins

SERVES:
12 muffins

INGREDIENTS:

1 finely diced fresh apple
1 1/4 cup all-purpose flour
1 1/4 cup oatmeal
1/2 cup light brown sugar, firmly packed
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 cup unsweetened apple sauce
1/2 cup milk
1 large egg

PROCEDURE:

Preheat the oven to 375 degrees and grease one 12 cup muffin pan and finely dice 1 cup of fresh apple.

Use a large mixing bowl to combine 1 1/4 cups all-purpose flour with 1 1/4 cups oatmeal, 1/2 cup firmly packed light brown sugar, 1/2 tsp baking soda, 1 tsp baking powder, 1/2 tsp salt and 1/2 tsp cinnamon and mix to combine.

Make sure that the brown sugar is completely incorporated into that and then add the diced apple and toss to coat.

Use another bowl for the wet ingredients by combining 1 cup unsweetened apple sauce with 1/2 cup milk and 1 large egg and whisking that up.

Add the wet ingredients to the dry ingredients and fold those together until they're just combined......then divide that into the prepared muffin pan and place the pan onto the center rack of the preheated oven.

They'll take just about 17-18 minutes to bake and it's a good idea to spin the tray half way around part way through.

HINTS:

Use either old fashioned or quick cooking oatmeal in this recipe….the old fashioned will give the muffins a chewier texture.
