Recipe: Turkey Waldorf Salad

SERVES:

INGREDIENTS:
1 cup walnut halves and pieces
1-2 tsp oil for toasting walnuts
salt to taste for walnuts
approx. 2 -3 cups cubed cooked turkey meat
approx 1 1/2 -2 cups sliced celery
approx. 3 cups chopped romaine lettuce
2 medium large apples, cored and sliced
2 Tbs lemon juice
approx. 1/3-1/2 cup mayonnaise
black pepper to taste
approx. 1/3-1/2 cup dried cranberries
PROCEDURE:
Add a tiny splash of oil to a medium to medium hot pan and toast the walnuts for a little bit.....until you can start to smell them toasting...then season them with salt and take them out of the pan to cool.
This salad doesn't take any time at all to come together......you just need to cube the turkey meat and slice the celery on a slight bias.....chop a little romaine lettuce if you want to bulk the salad up a bit and then core and slice the apples last.
As soon as you have sliced the apples, add them to a mixing bowl and squeeze about 1-2 Tbs lemon juice over those.....add the sliced celery, the romaine if you're using it......and the diced turkey....and toss that with just enough mayonnaise to lightly coat everything......season with a little black pepper to taste, add as many dried cranberries as you like, add the toasted walnuts....toss those into the mix and it is good to go!
HINTS:
There are no exact amounts for a salad like this so use your judgment with all of the ingredients.
